Here’s the thing I’ve noticed amongst the best of them — Almost all of these successful places observe few processes/ routines that distinguishes them from others. So without much ado, here’s the list of things which I find are consistent at the best restaurants in town.

Strong sense of hygiene — Clean floors, clean tables, properly managed toilets, clean drinking water, properly dressed stewards. These are the basics. When it comes to making your brand stand out, every little impression matters. Cleaning area or drainage area should be out of sight. No wires outside the walls. No unnecessary printouts sticking to glasses. The customer has come for the outing, he must witness a clean scenery.

Smiling Faces — Usually not much stressed upon, but is very important that your employees are happy and present their happy face to the customer. Smiling is contagious. It sets the mood for the customer. Essentially your employees are the salesman. The customer might just enjoy the food in normal circumstances. But if your employees treat them great, they will order more and come back more often.

Rewarding customers — Everyone loves being rewarded. Everyone loves special treatment. Gifting a free dessert on their birthday. Or just saying thank you to them for waiting outside goes a long way in building brand loyalty. Your loyal customers feel the need to be recognised and appreciated. You can do that by giving them a complimentary item or some form of cashback. In an industry where customer attrition is an eventuality, holding on to your customers become very important. A loyal customer eventually becomes a brand advocate, bringing in 5 other people with him. That’s why almost all iconic brands, use some form of loyalty program to retain their customers. ( Of course I am selling here.. )

Regular Events- It’s important that your brand engages with other brands and keep the engagement levels high. Hosting a book reading session, inviting artists/bands to perform, participating in food festivals, organizing a dish-tasting session, hosting a celebrated chef, hosting bloggers meet etc. A brand continuously need to re-invent it’s engagement strategy to stay afresh and to keep its ‘top of the mind’ recall value intact.

Fast Service — Make them wait outside for as much as you want, but once they are inside, they should be treated like the queen of England. Again a very minute point that people miss out on.

Psychologically, once a customer has placed an order, any delay in service feels to him that he is being valued less. What most restaurants do wrong, is allowing too many people inside, with too little a staff to serve them. It just spoils the whole experience.

Overall Ambience- The major expenditure of this industry is to get the ambience right. Still not many get successful. The reason is mostly the approach which they follow. They’d get the walls done from the best designers available, but the staff is un-trained. Good lighting, bad music. Expensive furniture, dirty floor. The approach that most people follow is ‘big-few’, spending big on few items and neglecting others. The approach that works is ‘small-all’, that is getting every small element right. Everything has to be in sync. Just like music.

So, basically if you look at it, there’s nothing new I have told you here. But I can personally guarantee that you implement all of this right, along with your core service( food ) being excellent, your sales with sky-rocket. Ironically, not everyone is able to.
